Maybe it's because you never had time to get around to it, maybe it's rare and hard to find nowadays, or maybe whatever reason you had, what game have you always been interested in playing but never have?
For me, there are a lot of choices, but the first one that comes to mind are the first two God of War games on the PS2. I've also never gotten around to playing any of the Resident Evil series or the Silent Hill series. I've also never gotten around to Legend of Zelda : Twilight Princess.

The Gears Of War series for me, probably.

My interesting in video games have been on the wane for a decade now. I start playing games, but I rarely finish them unless I REALLY like it.
Recently, there's only 2 games that I wanted to play, but I didn't spend the resources in doing so.
Portal 2 (no excuses) God of War 3 (no PS4, and I knew I wouldn't really use it for much gaming. This is the one game of recent time I actually regret not playing)
I have a way too long list of games I haven't played in history, like any Metroids since Super Metroid, any Castlevania other than the original and SotN, any Metal Gear since Solid (which I didn't even finish because I got bored of it), any Zelda that's not the original, the 2nd, and Ocarina (I missed Link to the Past), any Super Mario since...Mario 64, any Mega Man since 3 and X3, and just tons of other things.

You definitely need to go back and play Link to the Past. It's the best Zelda ever made and it still holds up pretty well in today's day and age.
And I need to add Portal 2 and the Metal Gear series to my list too.

GTA V.
Dumped the PS3 for the PS4 right after it came out, so I wasn't buying anymore PS3 games. Only a little while longer and I finally get my wish.

I can't wait to play GTA V! It's all been downhill since Vice City, but I'm hoping for great things from this game after everything I've heard.

I haven't got round to playing GTA V yet. To be honest I was kind of put off by the fact the map appeared to be a lot less dense than San Andreas, which was my favourite GTA by far because it was so detailed. I know technically the GTA V map is actually much larger, but it only has one city and only about 5 roads once you get into the countryside.

GTA V will probably end up on my list of unfinished games. It's solid enough, but there's something missing. I don't particularly like any of the 3 main characters, so maybe that's why.

As for games I want to play, Mass Effect 2 and 3. ME2 was fucking amazing. The gameplay was much more streamlined, although there's a small minority that hated the changes to the gameplay. ME2's biggest weakness is the story goes to an odd place (Shep dies and needs to be rebuilt, 6 Million Dollar Man style). ME3 was amazing, but the effort to dramatize it was really overboard (like EVERY mission had those emotional hero moments or sacrifice moments). The ending was terrible beyond words. I actually started loudly yelling and acting like a kid again because I felt so offended by the such terrible ending, and the ridiculous reasons Casey and Bioware made for the ending. I heard the ending was terribad, but I figured it was just people complaining just to complain. Once I got to it, OMG. SO BAD!

I heard it was better, but people still complained about it too.

Panzer Dragoon Saga. Everyone who has played it bascially says it's a masterpiece, but there was only like 6,000 copies made and the source code is gone so it will never see a downloadable re-release. Once I'm rich, I'll buy it and a Saturn off Amazon for an arm and a leg.

As for Panzer Dragoon games themselves, good luck with that.

A last minute quick fix to appease fans, probably. Rushed and not much thought put into it?
